Question SPAM Filtering

I am having lots of trouble with employees e-mail accounts and SPAM. We have an e-mail server running MailGate and it does having SPAM filtering running. Some SPAM is still getting thru. I went to the ISP side to look at the accounts and they are loaded with SPAM. I can set filtering in the actual accounts on the ISP side, but since the SPAMMERS have begun to change the spelling of the key words they use I fear that the filtering will allow some to pass. Most of the e-mails, of course, are drug pedaling for viagra, cialis,etc... and they are putting extra letters in the words. One of them had this [23] in the subject. If I set a filter to deny [] will it catch any number between the brackets? Does anyone have any helpful filtering assistance they are willing to bestow upon me? Point me to some tutorials, anything. Thanks.
