Question WinXP/Outlook2000: Selecting send account & send over thru SMTP over VPN?

I have an IMAP email account with my client who requires VPN cnx w/ proxies, and also 2 different personal email accounts (totally different servers) that can only be POP3/SMTP but require only an ISP. I have a high speed data connection. So I set up Outlook2000 on my WinXP box as Internet Only, and set the IMAP to use VPN as a "dial up" (even though I'm on a type of LAN).

All accounts receive messages, no problem. Sending emails has 2 problems that I need some advice on:

1. A new message will only go from whatever is set as the default email - can't find a place to select which account to send from, even though all 3 accounts show in the Outlook Today folder list. The only way I can figure out to send a new message from any of the 3 accounts is to change that account to be the default mail account (Tools>Accounts>Set as Default). This is a pain in the *ss (PITA). There's got to be a better way. I need to be able to manage all 3 accounts one-stop and send interchangably from them at will. (I'm a consultant with multiple clients.)Help?????

2. To get messages to send from either of the POP3/SMTP accounts, I have to disconnect VPN, which is a PITA, because I work remotely on the client's server, so discnx VPN means all work activity/file transfer stops. Not good. Why is this - a VPN conflict, or a proxy conflict?? No matter - is there a way AROUND it? some way to config Outlook or VPN or SMTP or proxy to allow sending to the SMTP while cnx to VPN?

(FYI, I do need to use Outlook - it's a workflowthing. I tried using other email clients, but I need the appointment and task functions altogether with the email.)

OK, you CAN choose which account to send from when you've got a bunch of different email accounts to choose from: from the compose message screen, you click File>Send Using.

So now it's just question #2 that's still unanswered.... Anyone got any ideas?
