Simple Outlook 2000 Problem

I am using profile based Outlook 2000 in conjunction with an Exchange server running Active Directory. Currently when I send emails, the recipient will receive it with my first name (in lower case) associated with the reply email address:

eg: firstname [mailto:firstname@yourdomain.com]

I want to be able to change this to my full name:

eg: Firstname Surname [mailto:firstname@yourdomain.com]

I'm not sure if this is a local setting within Outlook on my PC, a profile setting or Exchange Server setting.

I would greatly appreciate some direction and steps in solving this frustrating problem.
