Want to remove Office 2000 Premium

I want to remove Office 2000 Premium from my hard drive, as I have recently installed Office Standard Edition 2003. I fear removing some critical files and not being able to use either version rendering all my saved word docs and Excel files unreadable. Can someone please advise and counsel me on the safest method to remove Office 2000?
