Well, if you're really serious about it, you could get a firewall (hardware) and strip all attachments as they come in.

Other than that -- it's one of those "live with it" things until all the authors of viruses get enough fiber in their diet that they are too busy to keep writing this garbage.
What I do before starting up in the morning is I log onto the mail server using web access, then delete them all directly from the server. That at least saves me the time of downloading them in the morning. Of course, they come in all day, but it's not as bad as 50 or 100 spams and virus e-mails all at once when I first fire Outlook up.
