Network permissions for different users

Is it possible using XP to give varying access to different users on a network. We are a drop-in centre with a small network set up so visitors can use our facilities with Guest login, but staff members use the same PCs and need access to files on our Admin PC. I only seem to be able to share these files
with all users or no users.

I know how to give permissions by turning off Simple File Sharing, but this only seems to apply to local users.
